Here are a few of our absolute favorite Medjool Date dessert recipes. Perfect for the Holidays!

Yummmmmmmmmmm...........
Mini Lemon "Cheesecake" with Gingered Date Crust (AIP, nut free, dairy free, refined sugar free)
Ingredients
Serves: Makes 18-20 mini cheesecakes
  • CRUST:
  • 10 Medjool dates, soaked in warm water if hard
  • 1 cup shredded unsweetened coconut
  • 1½ teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • pinch of salt
  • 1 tablespoon coconut oil (melted)
  • FILLING:
  • ¾ cup raw coconut butter (I use Artisana)
  • ½ cup palm shortening (I use Spectrum Vegetable Shortening. The only ingredient is palm oil.)
  • 2½ tablespoons honey
  • 1½ tablespoons lemon flavoring (I use Simply Organic)
  • ¼ teaspoon vanilla extract
  • pinch of salt
  • lemon zest for garnish(optional)
Instructions
  1. Preheat oven to 250F. Line cookie sheet with parchment paper.
  2. Line a mini muffin pan with mini paper liners.
  3. Drain dates if soaked, then pit and roughly chop.
  4. Spread shredded coconut onto lined cookie sheet and toast in oven until golden brown. Watch carefully as it will burn easily. Allow to cool.
  5. In a mini food processor, pulse all of the crust ingredients until it comes together into a ball. Chill, if desired, while working on the filling.
  6. For filling, measure out coconut butter and place filled measuring cup into a larger cup or bowl filled with hot tap water. This will soften the coconut butter, making it easier to work with. Be sure that no water gets into the coconut butter.
  7. Once coconut butter softens, beat all filling ingredients with either a hand mixer or a stand mixer fitted with a whisk attachment until smooth and shiny. (It's ok if there are some small bumps.)
  8. To assemble, make little balls out of the crust and press into the bottoms of the mini muffin cups.
  9. Pour filling into a zip-top bag, seal top and cut a corner off the end of the bag.
  10. Pipe filling onto the crust.
  11. Chill in fridge or freezer until set.
  12. Store in the fridge. Best served cold.
  13. Garnish with grated lemon zest.
  14. Enjoy!

sticky date & almond bread pudding with amaretto zabaglione 

ingredients

  • 8 cups 1 1/2-inch cubes egg bread with crust (from one 16-ounce loaf)
  • 2 1/4 cups chopped pitted Medjool dates (about 12 ounces)
  • 1/2 cup sliced almonds
  • 6 large eggs
  • 2 large egg yolks
  • 1 cup baker's sugar (superfine sugar) or regular sugar
  • 3 1/2 cups half and half
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon (generous) ground nutmeg
  • Powdered sugar
  • Amaretto Zabaglione

instructions

Arrange bread cubes in single layer on rimmed baking sheet. Let stand at room temperature to dry overnight.
Butter 13x9x2-inch glass baking dish. Transfer bread cubes to prepared dish. Mix dates and almonds in medium bowl. Sprinkle date mixture over bread and toss to distribute evenly. Using electric mixer, beat eggs and egg yolks in large bowl until frothy. Add 1 cup sugar and beat until mixture thickens and is pale yellow, about 5 minutes. Add half and half, vanilla, and nutmeg; beat just until blended. (Bread mixture and custard can be prepared 2 hours ahead. Let bread mixture stand uncovered at room temperature. Chill custard; rewhisk before continuing.)
Preheat oven to 375°F. Pour custard over bread mixture, then press lightly on bread with rubber spatula to submerge. Let stand 15 minutes, occasionally pressing lightly on bread to submerge.
Bake bread pudding 25 minutes. Using large spoon, press bread down, allowing custard in dish to rise to surface. Spoon custard evenly over bread mixture. Continue to bake pudding until knife inserted into center of custard comes out clean, about 20 minutes longer.
Remove bread pudding from oven and let stand 10 minutes. Sprinkle with powdered sugar. Serve warm with warm or chilled Amaretto Zabaglione.

Holiday Medjool Date Recipes


Phoenix Dactylifera Medjool Palm Tree

What to do with all those scrumptious Medjool Dates...

This amazing Palm not only look beautiful in your yard but its delicious fruit can be used for many great Holiday dishes! Here are a couple of our favorites....
Pork Tenderloin with Medjool Date & Cilantro Relish

Ingredients
3 tablespoons olive oil, divided
1 pork tenderloin (about 1 1/2 pounds)
Kosher salt, freshly ground peppe
2/3 cup Medjool dates (about 4 ounces), cut into small pieces
2 tablespoons fresh orange juice
3 tablespoons chopped fresh cilantro plus leaves for serving
Directions
Preheat oven to 425°F. Heat 1 tablespoon oil in a large ovenproof skillet over medium-high heat. Season pork with salt and pepper and cook, turning, until browned on all sides, 6–8 minutes. Transfer skillet to oven and cook pork until an instant-read thermometer inserted in thickest part registers 140°F, 10–15 minutes. Transfer pork to a cutting board and let rest at least 5 minutes before slicing; set aside pan drippings.
Toss dates, orange juice, reserved pan drippings, 3 tablespoons chopped cilantro, and remaining 2 tablespoons oil in a small bowl; season with salt and pepper. Spoon relish over pork and top with cilantro leaves.
DO AHEAD: Relish (without pan drippings) can be made 4 hours ahead. Cover and chill. Add pan drippings just before serving.




Bacon Wrapped Dates




Ingredients

15 Medjool pitted dates
1 pound aged Manchego, cut into 15 blocks
5 slices bacon, cut into thirds
1/2 cup maple syrup

Directions
Preheat the oven to 400 degrees F.

Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.

Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.
